Soup’s On! With Artist Lea Barksdale.

My first hacks and notes were from 12/25/2017 which has evolved to making our adaptation notes to date.

Our adaptation of Butternut Squash Soup from My Beverly Hills Kitchen: Classic Southern Cooking with a French Twist Cookbook: A Cookbook by Alex Hitz

3-4 apples, I use cooking apples, Macoun or McIntosh – Note: I use 3 large or 4 smaller apples. 
1 ½ pounds butternut squash
7 ounces sliced onion or 1 ½ cups diced onion*, yellow or Vidalia

1 teaspoon olive oil

3 ½ cups organic chicken stock

1 tablespoon dried oregano
1 tablespoon dried rosemary
2 teaspoons salt, divided

1 cup heavy cream or substitute cream of coconut or full fat coconut milk to taste – Note: Lea substitutes cream of coconut or full fat coconut milk to taste.

*To slice onion I use a mandolin set to ¼ inch.

 

YIELD: 8-10 servings

Peel, seed and cut the squash into approximately 1 ½ inch pieces. Peel, core and cut the apples into pieces approximately the same size as the squash.

Slice onions into ¼ inch pieces.

Preheat oven to 400 degrees, line two baking sheets with parchment paper, combine the apples, squash and onions with ½ teaspoon of olive oil and ½ teaspoon of salt, per baking sheet, toss together until everything is coated. Roast for 15-20 minutes.

Transfer apples, squash and onions to a medium size enameled cast iron dutch oven or pot.

In a dutch oven or pot over medium heat, combine the apples, squash, onions, chicken stock, 1 teaspoon of salt, rosemary, and oregano. Bring to a simmer, then set to low heat and cook approximately 15 minutes.

Remove the dutch oven or pot from the heat and use an immersion blender to puree all ingredients.

Ladle or pour all ingredients into a medium size tempered glass mixing bowl and stir in the heavy cream. Cover and refrigerate, overnight. When it’s time to serve, reheat soup at low heat on the stove, serve hot.
